Gut Reset Muffins
These grain-free, lower-carb muffins help support digestion, steady energy, and daily protein intake without relying on sugary breakfasts.
Serves: 6 / Prep time: 7 min / Bake: 20-25 min
Ingredients:
- 1 cup apple puree or banana puree
- 2 eggs
- ¼ cup syrup of choice
- ¼ cup almond butter
- 1 cup almond flour
- ½ cup Nuzest Vibrant Insides
- 1 tsp baking powder
- ½ cup chopped walnuts
- ⅓ cup chopped figs
- 1 tsp vanilla extract
Method:
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the wet ingredients until smooth.
- Add the almond flour, Vibrant Insides, and baking powder. Stir until fully combined.
- Fold in the chopped walnuts and figs.
- Divide the batter evenly between the muffin liners, filling each about three-quarters full.
- Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool completely before serving or storing.
